The mint, holy basil, tarragon, thyme, orageno and zatar are forgiving. In spite of my not having paid them much attention, they've grown big and hearty. I'm drying bundles to ship to friends this winter.
I've been drying too. For powders in the kitchen: onion and celery (organic); next up, garlic and hopefully cayenne pepper from the garden. Also drying sage, and calendula for infused oil. 'Tis the season!

i had not thought of celery powder! hummm. . . what are your favorite applications for it?
Sauces mainly where my husband doesn't want celery pieces, like homemade pasta sauce.
