It's been over a year since I made the super popular no knead bread. This weekend I made two loaves for different dinner parties. The bread was a hit and I remember why we used to make it all the time. Here is the recipe I use:
- 3 c flour
- 1 1/4 c warm water
- 1/4 t yeast
- 1 t salt
- mix
- cover and hold for 12 hours
- transfer to baking vessel
- wait 2 hours
- bake 45 min @ 425

Yum! I live by no-knead.
For pizza doughs, cut back on the water and replace with EVOO.
For sofer sandwich, cut back on water and replace with melted butter and/or EVOO (a combination).
I also like substituting some oats for some of the flour. Or going with a random mix of different kinds of flours.
bbum i'm going to try the butter. i love no knead bread but it can be awful hard for sandwiches.
