When are the pods ready to harvest, and do you use the whole pod or just the beans for flour? I know it makes fantastic bread but I have no idea how to start with it!
The pods come in anywhere from late June until the end of August. Summer.They need to be dry and make a rattle sound or it is too early.We grind the pods and the seeds inside. The pod is all sugar while the seed is all protein. Ideally you would dry the pods out at 150F for 6 hours before grinding in a vitamix or larger mill.

Thanks! I was wondering if the early drying/dropping of seeds out here would be a problem, but they're matching your description pretty well. Do you let them all tree ripen or does it matter if you pick them early and let them dry?
