Freezing is the New Canning

After going through a peach canning marathon (Wendy made chutney with them) we had no desire to do anymore canning. I just sliced up the remaining peaches, vacuum bagged them, and froze them. This morning I cracked open a bag of our frozen peaches and the contents to my home made greek yogurt smoothie. This idea worked out great.

I usually freeze fruit pieces on a cookie sheet before vacupacking them. That way they don't get frozen together as one big clump. If you are going to make a smoothing and only need 2 or 3 peach pieces you don't have to whack chunks off with an axe, you can just pick them out then toss the baggie back in the freezer for use the next day.
