Wendy has been complaining about my bread not being soft and fluffy. She is right I used to bake a better bread. I took her suggestion to use a clay pot and backed off a bit on the yeast (using only a 1/4 tsp). This bread came out pretty decent. Here is what I did:

- 3 cups white flour
- 1/4 tsp yeast
- 1 1/4 tsp salt
- 350 milliliters water
- mix and wait overnight
- transfer to bowl and let rise for 2 hours
- transfer to clay pot and bake at 350 for 1.5 hours in sun oven

Let bread cool for one hour on rack and use a plastic bag + paper towel to help hold moisture.
