
Fresh Mozzarella Cheese

We have been refining our recipe for mozzarella cheese. We had only made a farmers cheese up until now. Using only lemon juice and salt with our local milk. Now we have started playing with rennet, citric acid and some cheese specific additives to try and get a real mozzarella. We are getting closer, but the shine is not quite right yet.
