Kombucha Bottles

I find that the bottles make for a more readily drinkable kombucha with better carbonation than the other setups we have tried. We just bottled another batch yesterday and I'm keeping the temperature as close to 75F as I can for the bottles to maximize carbonation before refrigeration.

How long do you keep them out after your second bottling before refrigerating them?
We have been bottling just once after 10 days in a large container with the mother. The bottles are capped immediately and left for 3 days at full temp (75F) before refrigeration.
Ah! I'm going to give that second fermentation a bit of time without refigeration. My kombucha batches have tasted great but lack fizz. Thanks, Mikey.
This is one of the food items I would like to try some day.
Will you please share how you're capping the bottles? *THANK YOU!* (((((HUGS))))) sandi~a new kombucha brewer!!! :)
@hugs-sandi - We are using a beer bottle capper on used beer bottles.
