We were having some friends over and I wanted to make a desert. I almost ran out for ingredients to bake brownies and then I thought about the food we buy in bulk: avocados, limes, dates, several kinds of nuts, shredded coconut, honey. I decided instead to make raw key lime pie with those very ingredients. Here's the recipe.
FIlling:
four to five (depending on size) avocados
1 lime
honey (apx 4 to 6 tablespoons)
Pie Crust:
1.5 cups assorted nuts that you like
6 pitted dates
1.5 cups shredded coconut
Add all ingredients in this order: nuts, coconut, dates to a food processor. Never let the materials get too fine, keep it a little chunky. Then dump into a pie pan and use the bottom of a glass to compress into your crust. Freeze for 20 minutes to set
Mix avocados, juice from one lime and honey (sweeten to taste) with a pinch of salt in the food processor. Pour into pie crust and adorn with fruit if you want to. Freeze to set. Pull out 1/2 hour to 45 min before your ready to eat it. Yum!
