We made the following with our first kefir grains:
Blueberry smoothie
Salad dressing with dill
Cheese
The kefir was made from two cups of organic milk sitting at a temperature of 72F for 24 hours. I think these all would have been better if we had let the kefir sit for two days making it a little thicker and more pungent.

what is the flavor of kefir like? what sort of texture does it have? seems pretty versatile.
yes it seems quite versatile. the flavor goes from mild to tart based on incubation time, leaving the jar lid open, and type of milk. there's a great site on the subject: http://www.seedsofhealth.co.uk/fermenting/kefir_howto.shtml
