Woah. Kefir sure is adaptable. We saved some curds in cheese cloth today and let them dry out for 2 hours. I then added a pinch of garlic salt and we had a delicious cream cheese.
You can also use it to make cheese-cake. Produce normal or strong kefir (let it work for 36 or even 48 hrs). And safe it in the fridge, if it's not enough to produce some more. Take your favorite cheese-cake recipe and substitute about half of the cream in it with your kefir.
