
Red okra recipe

I know that lots of folks are thinking of ways to eat okra. We learned this simple recipe at a pot luck. Its a sauteed okra with garlic, cumin, jalapeno, nutmeg and tamari. The recipe is a good way to eat a lot of okra quickly. We favor the red okra over the green. The green is always woody no matter how early we pull them. Note to self: next summer more red okra in the garden.

Red okra us unknown in India. We just have the green ones.
What does tamari taste like?
Tamari tastes a lot like soy sauce. At least the knd we buy. I have been told that real tamari is amazing which is a byproduct of making miso.
Perhaps it is the climate that causes the green okra to be so woody?
You could use it in gumbo, the extended cooking in a soup/stew should soften it up, making it much more palatable thus salvaging the crop, (or at least making it more enjoyable.)
Freeze the green okra and make a gumbo in the dead of winter. A hearty stew is the best thing ever in winter weather.
Maybe try pickling the green? I love me some pickled okra. I have only every had the store bought kind but homemade must sure be tasty! :)
