Now that the global credit market has had time to thaw it seems appropriate that my yard is about to freeze. I went to all of the tomato plants and pulled most of our remaining green tomatoes. Guess how many I picked today? 18lbs. Yep, I was shocked too. The tomatoes are in a box with some apples and a banana to accelerate up their ripening. I guess we have officially hit the point of needing to can. I am going to dry some out tomorrow for sundried tomatoes. I also pulled a lot of basil and remaining egg plants.

Have you considered slicing and dehydrating your tomatoes? They're perfect for tossing into stews or crushing and adding to bread. And more importantly to me, they take up less room than frozen tomatoes, as the dehydrating process shrinks them quite a bit.

Lots of DIY dehydrator plans out there -- they amount to a hair dryer in a box, really. Alternatively, you could fork out $40 at wal*mart and have one already made. I did that, as I needed one right away.

yep, I have enjoyed dehydrating tomatoes. We go through quite a bit of sundried tomatoes. If we had to pay $5-$8 for a small jar that would sure add up.

I had a food dehydrator, but I sold it for $10 at a yard sale last month. They draw 250 - 1000 watts which is way too much juice for us to use since we live off grid.

I use my sun oven and leave the lid cracked. It is easy to control the temperature for anything between 120 to 350F. Just orient the oven towards or away from the sun.
