My morning breakfast menu called for a pina colada smoothy. I went shopping for a coconut in the middle of New Mexico and actually found one. Then I had to figure how to crack it open. A hammer and nail works well on the three dark spots (weak points). Unfortunately no juice came out. My coconut seemed to be from the beginning of time. Old and rotten. I busted it open with a hammer after placing the coconut in a old tortilla bag so it would not break apart all over the kitchen. In the end I used some coconut shavings we had on hand with some pineapple concentrate, bananas, and fresh squeezed OJ. It was pretty good. I am bummed about the coconut not working out.
